Serve with cranberry sauce and a salad to make it complete.  Gretta serves 6/prep time 20 min/cook time 30min ingredients; 3 cups vegetable broth 3 tablespoons olive oil 1 large onion, diced 3 garlic cloves, minced 1/2 pound fresh porcini mushrooms (wiped of grit) and sliced 2 tablespoons fresh thyme chopped 2 tablespoons vegan butter (earth Balance) salt and pepper 1/2 pound butternut squash, cubed 2 cups arborio rice 1/2 cup dry white wine 2 tablespoons fresh cilantro, chopped directions; 1- Heat the vegetable broth in a medium saucepan and keep warm over low heat. 2- Heat 1 tablespoon of the olive oil in a large skillet over medium heat. Add half the onions and half of the garlic stirring until translucent about 5 minutes. 3- Add the fresh mushrooms, squash, herbs and butter and saute 3-5 minutes until lightly browned. Season with salt and pepper. Cook for 2 more minutes and set aside. 4- Coat a saucepan with the remaining olive oil and add the remaining onions and garlic. Add the rice and cook for 1 minute till well coated and opaque, about 1 minute. Stir in the wine and cook until evaporated. Your thoughts are causing anxiety and therefore suffering. When we have this mental streaming or chatter we are run by it and most often have no clue that it’s happening. Your ego is running wild with thoughts of resentment and thoughts of being “not enough”, or disappointment. We live in this negative stream of incompleteness and always feel wronged by others. So how do you start to unfold the web you have woven to undo this? First, you need to be aware that your mental chatter is running you and fanning the fire that leads to an anxious life. Once you put your awareness on this, you can start to shine the light of freedom from your own thoughts on your life. Change all of your fear based thoughts to loving ones. Learn to love yourself so much, that the love from others does not change your mood or ultimate happiness. Dismiss any ideas that you are less than, and make the opinion you have of yourself, the only one that counts. prep time 30 minutes cook time 30 minutes ready in 1 hour/ serves 6 6 Tablespoons olive oil 1 quart vegetable or chicken stock 3 garlic cloves, crushed 1 teaspoon crushed  red pepper flakes 2 cups short grain white rice 1 pinch saffron threads 1 yellow onion chopped 1 red bell pepper chopped 1 yellow bell pepper chopped 1 orange bell pepper chopped 1 pound halibut cut into small pieces 1 pound scallops 1 pound mussels (rinse under cold water and trim strings with a paring knife and discard) 1 tablespoon paprika salt and pepper 1 bay leaf a pinch of salt 2 cups dry white wine 4 large shallots finely chopped 6 Tablespoons butter cut into pieces 4 cloves garlic finely chopped DIRECTIONS: In a medium bowl, mix together 2 tablespoons olive oil, paprika salt and pepper. stir in fish and scallops to coat, cover and refrigerate. Meanwhile, Heat 2 tablespoons olive oil in a large skillet over medium heat. stir in garlic red pepper flakes and rice. stir to coat rice with oil for 3 minutes. stir in bay leaf, saffron threads and vegetable stock. Bring to a boil, cover reduce heat to medium low, and simmer for 20 minutes. In a large stockpot over medium heat, combine wine, shallots, garlic, butter and salt, simmer for 5 minutes, add mussels, cover and turn heat up to high. Cook mussels until all are opened about 5 minutes. Meanwhile heat 2 tablespoons oil in a separate skillet on medium heat.
